Cupcake al caffè

Dear friends of Marcafè, welcome back! Today we offer you a simple and delicious recipe: coffee cupcakes, perfect little sweets to eat for breakfast or as a snack and they are very quick to prepare... try them and believe them!

Let's start by getting all the ingredients:

  • 240 g 00 flour
  • 190 g Sugar
  • 40 g Seed oil
  • 10 g Baking powder
  • 2 eggs
  • 70 g of Marcafè Coffee
  • 110 g Milk
  • 4 tablespoons Dark chocolate chips (add or remove as desired)

Procedure:

First, let's prepare the coffee (a 3-cup moka pot should be enough) and once ready, let it cool without adding sugar.

Place the eggs and sugar in a bowl and whisk until light and fluffy.

Add the coffee, milk, and oil to the bowl and mix everything together with the whisk.

At this point we can add the sifted flour and yeast and mix everything together.
Finally, add the chocolate chips and mix one last time.
Take some muffin cups and fill them a little more than halfway with the mixture.
Bake in a preheated oven at 180°C for about 20 minutes.
Once they have cooled, we can store them in a tightly closed airtight container for up to 2-3 days.
